Cookie Recipes

"Chewy Chocolate Chunk-Cherry Cookies"




Here are crave-worthy cookie recipes that have a kiss of cherry and make a sweet valentine when sealed with a personalized cherry-hearts tag! (Valentine's Gift Tags)


Ingredients:

3-1/2 c. flour
2 tsp. baking soda
Dash of salt
3 sticks unsalted butter, room temperature
2 c. packed light-brown sugar
1 c. sugar
4 large eggs
2 tsp. vanilla
12 oz. bag semisweet chocolate, coarsely chopped (2-1/2 cups)
8 oz. dried cherries (1-1/2 cups)You can also swap the cherries for dried cranberries)


Directions:

1. Preheat oven to 375 degrees. Whisk together flour, baking soda, and salt. Beat butter and sugars until fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla, then flour mixture. Beat in chocolate and cherries. Refigerate dough for 1 hour.

2. Roll dough into 1-3/4 inch balls (about 3 tablespoons each), and arrange on parchment-lined baking sheets, spacing about 3 inches apart. Bake until edges are golden, 12-14 minutes. Let cool on sheets set on wire racks for 10 minutes, then transfer cookies to racks; let cool completely.

3. Serve with some steamy "Snowman Soup."

"Peanut Butter Sweet Hearts"

They may look like a labor of love, but these peanut butter cookie recipes are a snap to make. Make your favorite peanut butter cookie recipe, or buy a package mix from the store; put rounded tablespoons onto a cookie sheet then push your finger into the dough twice to make the hearts, and fill with raspberry jam. Bake as directed. Yummy and fun!! Serve at parties or give as a "special treat" to someone you love!!

TIP: Surprise your sweeties with edible valentines. Heart-shaped cookie cutters make it easy, all day long. For dinner, try sauteed Polenta, or add roasted red and golden beets to a salad. Or start the day with french toast breakfast in bed. For dessert, make rosy gelatin cutouts with pomegranate juice and pink lemonade, strawberry ice cream sandwiches, or fragrant cherry scones. Still loving this idea? Add cute carrots to soup, or make lovey-dovey ravioli or the best brownies.

Love Bite Tips:

Polenta--Cut firm polenta, then sautee'
Beets--Slice roasted beets into rounds, and cut hearts
French Toast--Freeze the bread for about 15 minutes, then cut heart shapes with a cookie cutter
Gelatin--Make it extra-firm by using 1-1/2 times gelatin called for in the recipe, and cut heart shapes with cookie cutters after it has set; rinse cutter with warm water after each cut
Ice Cream Sandwiches--Cut frozen sandwich with cookie cutter
Scones--Cut dough before baking
Carrots--Slice into 1/4-inch rounds while raw, then cut out hearts. Add to soup, and simmer until tender.
Ravioli--Cut with smaller cookie cutter then cook
Brownies--Cut after baking. Wipe cutter, and coat with nonstick spray between cuts.
