Spring Cupcakes & Fun Easter Treats



Celebrate with your "Peeps" this season. Create fun recipes, like spring cupcakes, crafts, fun party decorations and Easter treats for the whole family.

Use store-bought "Peeps" to decorate any cake or spring cupcakes, slice the top off of an orange, top with whipped cream and a "Peep." Fill a candy dish with jelly beans, and scatter "Peeps" on colored skewers or straws cut to about 6" high in the candy dish. Fun ideas for any party or just for a fun dessert for the kids!

Homemade Cupcake Recipe

Ingredients You Need:

1/3 cup unsweetened cocoa powder

2 Tbs. canola oil

3-1/2 cups flour

1 Tbs. baking powder

1/2 tsp. salt

1-1/2 cups unsalted butter (3 sticks) softened

1-1/2 cups sugar

4 eggs

1-1/2 cups milk

2 tsp. vanilla

Directions:

1. In a small bowl, blend cocoa powder and oil until smooth. Set aside. Heat oven to 350 degrees. Place liners in two standard-size muffin pans, for a total of 24 cupcakes. In a medium bowl, whisk flour, baking powder and salt.

2. With an electric mixer, beat butter and sugar until light-colored and smooth. Add eggs, one at a time, beating well after each egg. On low speed, add flour mixture alternating with milk. Stir in vanilla. Divide batter in half. Stir cocoa mixture into one half. Spoon both batters into liners, 1/3 cup in each. (12 chocolate, 12 vanilla or 1 spoonful of each into each liner for chocolate-vanilla swirled cupcakes.)

3. Bake at 350 degrees for 25 minutes or until done. Let cupcakes cool, then transfer onto a rack.

4. Frosting for Spring Cupcakes:

Beat 3 sticks unsalted butter, softened (1-1/2 cups), 6 cups powdered sugar, 1/2 cup milk, and 1/2 tsp. vanilla on low speed to blend, until good spreading consistency. Divide frosting into bowls and add desired food coloring to each. Transfer frosting to plastic bags and snip off one corner. Pipe in swirled patten onto cooled cupcakes. Top with colored "Peeps."


Marshmallow Frosting for Spring Cupcakes:

In a large metal bowl, whisk together 3 egg whites, 2 cups sugar, 1/4 cup cool water and 1/2 tsp. cream of tarter. Place over a pot of simmering water; beat until mixture registers 160 degrees on an instant-read thermometer, about 7 minutes. Tint and pipe onto cupcakes. Top with colored "Peeps."

Tip: Thrift Shop Treasure In today's economy, shopping for used goods can yield diamonds in the rough--like barely used dishes, vintage clothing, or antique furniture--at great prices if you are in the know. Here are a few tips on what to look for and what to avoid:

1. Look for craft materials. Lightly worn crayons, pencils, drawing pads, and paints are as useful as new ones. Material scraps, buttons, ribbon and old frames are very useful craft materials.

2. Look for baby and kids' clothes. They're often in mint condition because little ones grow out of them so quickly.

3. Look for wool sweaters. You'll pay a tenth of what a new one would cost. Just have it professionally dry-cleaned or use an at-home product like Dryel.

4. Look for plates, bowls and mugs. These usually go for rock-bottom prices. Make sure they have no chips or cracks.

5. Avoid baby/toddler books. They've most likely been mouthed, chewed, sucked, and slobbered on.

6. Avoid Stuffed animals and hats. Even the most adorable ones can be havens for germs or head lice.

7. Avoid cutlery. Unless you can guarantee it's stainless steel, you risk ingesting rust.
